Pumpkin Scones

Scones are the perfect accompaniment to coffee or tea, and we love them for breakfast, or snacks on the go.  For fall and the holiday season, we mix it up a bit, and add some pumpkin, maple glaze and spices to get our festive mood on!  I hope you enjoy!

Pumpkin Scones

Spicy sweet, with a holiday flair, make these pumpkin scones anytime!
Ingredients
  • 5 cups whole wheat flour, freshly milled
  • 12 tablespoons cold butter, cut into small chunks
  • 1 cup light brown sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp nutmeg
  • 1 can pumpkin puree (or 1 cup homemade)
  • 2 eggs
  • 1 cup milk
  • For the glaze:
  • 1 cup confectioners sugar
  • 1 tablespoon maple syurp
  • 1-2 tablespoons milk
Instructions
  1. Begin by mixing flour, sugar, baking powder and spices together.
  2. Cut the butter into the flour mixture until crumbly
  3. In a separate bowl, mix the eggs, milk and pumpkin puree.
  4. Add the wet ingredients into the dry and mix well.
  5. Place in a greased pie pan
  6. Bake in a preheated 400° oven for 18 minutes.
  7. Cut into triangles when cool.
  8. Mix the confectioners sugar, maple syrup and enough milk to make a thick glaze.
  9. Drizzle glace over scones.
