Whole Wheat Blueberry Chocolate Chip Muffins

I am a sucker for good muffins. I can’t seem to stop after just one and let me tell you this recipe is no exception! I have to pat myself on the back because even my hubby loved these! (He is particular with his food… but I still love him) I also have a confession to make, no matter how healthy the muffin recipe is I HAVE to put chocolate chips in it. Muffins without chocolate is like having coffee with no caramel…it’s a food sin!! Okay, maybe that’s a bit dramatic but you get my point. 😉

Any chance I get to use my new grain mill I take it! Makes the baking that much more fun.

Here is the somewhat healthy muffin recipe, that would honestly be more healthy if it wasn’t so addicting:

Amazing Blueberry Chocolate Muffins

Ingredients
  • Dry Ingredients:
  • 1 Cup Freshly Milled Whole Wheat Flour
  • ½ Cup Ground Flaxseed
  • ¼ Cup Wheat Germ (untoasted)
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • ¾ Cup Old Fashioned Oats
  • ½ Tablespoon Salt

  • Wet Ingredients:
  • ¾ Cup Plain Yogurt
  • ¼ Cup Olive Oil
  • ¼ Cup Honey
  • ¼ Cup Brown Sugar
  • 2 Large Eggs, Beaten

  • Add-ins:
  • ¼ Cup Blueberries
  • ¼ Cup Chocolate
  • Chopped Walnuts
Instructions
  1. Preheat oven to 350 degrees. Mix together the dry ingredients, set aside. In a separate bowl mix together the wet ingredients. Add your dry ingredients to the wet ingredients. Mix until blended. Stir in the blueberries and chocolate chips. Pour batter into greased muffin pans, remember to not overfill. Sprinkle with the chopped walnuts. Bake 10-15 minutes or until brown and toothpick inserted comes out clean. Cool on wire rack.
  2. Makes: 1 dozen regular muffins & 1 dozen mini muffins
Notes
*Store in fridge in an airtight container/ziploc or in freezer for later use
