Whole Wheat Chocolate Chocolate Chip Banana Muffins

What are your favorite muffins? My children call all muffins cupcakes and needless to say, I don’t correct them. If they are happy with banana muffins, blueberry or pumpkin muffins and think they are cupcakes I am happy!

Banana muffins are some of our favorites so adding chocolate chips and cocoa only make them better. With Addie’s help we as we ground fresh whole wheat flour for our muffins. Both of the kid’s favorite part is turning on the Wondermill.

Ingredients:

  • 3 ripe bananas, mashed
  • 1/3 cup buttermilk
  • 1/2 cup organic cane sugar
  • 1/2 cup sucanat (or brown sugar)
  • 1 large egg
  • 1 1/2 cups whole wheat flour
  • 1/4 cup of cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 Tablespoons mini chocolate chips

Directions:

Preheat oven to 350°F. Grease your muffin tins, I really prefer to use coconut oil.

In a large bowl, mash your bananas with fork. Mix in your egg, milk, sucanat and sugar. In another bowl, whisk together flour, cocoa powder, baking soda and salt. Slowly add your flour mixture to wet mixture and mix until just combined. Fold in your chocolate chips.

Spoon equal amounts of batter into your muffin tins. Bake about 25 minutes, or until toothpick inserted in center comes out clean. Allow to cool about 10 minutes in pan, then remove to a wire rack to cool completely.
