Try Pizzelles, the delicate Italian wafer cookie with a secret ingredient

Pizelles. the delicate Italian wafer cookie, are light and crispy, an old world tradition at Christmas

Pizzelles are the delicate Italian wafer cookie made with a special pan, similiar to a waffle iron.  They are wafer thin, crispy and they don’t travel well.   But their delicate character makes for a very special Christmas cookie.  They are also served at Easter and during special occasions like weddings.  My secret ingredient, for melt in your mouth Pizzelles starts with the Wondermill Electric Grainmill, and organic short grain brown rice.

The addition of rice flour in the pizzelles batter, creates a delicate texture with just the right crispness, yet a tender mouth-feel.

Delicate Pizzelle wafers

The Italian wafer cookie is made more delicate and tender with the addition of rice flour, milled on the Wondermill Electric Grain Mill
Ingredients
  • ½ cup organic coconut oil
  • ⅔ cup of brown sugar or organic raw sugar
  • 3 eggs
  • 1 cup of brown rice flour, freshly ground
  • 1 cup of whole wheat flour, freshly ground
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • ½ tsp. anise seed
  • ¼ tsp. sea salt
Instructions
  1. Grind 1 cup of whole brown rice and 1 cup of whole wheat on the pastry setting of your Wondermill Electric Grain mill. Set aside 1 cup of rice flour, and 1 cup of whole wheat flour for this recipe.
  2. Cream together in a medium bowl coconut oil, sugar, and eggs. Beat until smooth. Add vanilla, anise seed, and salt. Mix well. Mix in rice flour and wheat flour and mix well. Batter with be thick, like cookie dough, not runny.
  3. Preoil and preheat Pizzelle iron. If you are using an electric pizzelle iron, the indicator light will show that the iron is hot. If you are using a stove top pizzelle iron, you will know the iron is hot when it steams when open, and a few water droplets sprinkled on the surface fizz and sizzle.
  4. When the Pizzelle iron is hot, drop 1 tsp. of batter into the center of each circular motif on the inner surface of your iron. Close the iron and wait till the indicator light signals that the wafers are done, about 90 seconds. Wafers should be golden brown.
  5. None electric irons will need to be flipped after 1 or 2 minutes to cook both sides of the wafer evening.
  6. When wafers are golden brown remove from the pizzelle iron and cool in a single layer on a wire rack. They come out of the pizzelle iron soft and pliable and will crisp up quickly.
  7. If you want to make cannoli, roll the pizzelle quickly, as soon as you remove them from the pizzelle iron. Then allow to cool. Fill with whip cream, or hazelnut filling, just before serving, using a piping bag with nozzle.
