Whole-Wheat Soda Biscuits

These soda biscuits are a cinch to whip up! Start to finish takes less than 25 minutes. Enjoy them fresh from the oven with butter and jam for a satisfying breakfast!

Ingredients:

  • 2 1/4 cups whole wheat flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 Tbsp shortening
  • 1 cup sour milk*

*Regular milk can be soured by adding 1 Tbsp of vinegar to 1 cup of milk. Wait for 2 minutes and then stir before using.

Directions:

1. Grind flour.

2. In mixer, blend together flour, salt, soda, and shortening until mixture resembles coarse meal.

3. Gently stir in sour milk, mixing only until all the dry ingredients are moistened.

4. Turn the dough out onto a floured surface. Knead two or three times. Sprinkle lightly with flour.

5. Press out with fingers to 1/2 inch thickness.

6. Cut out biscuits using the bottom of a glass or a biscuit cutter.

7. Oil a baking sheet. Dip the top of each biscuit in the oil on the sheet and turn over to bake. Bake at 400F for 15 minutes of until lightly browned. Makes 12.

Tips: Fifty percent all-purpose flour may be used for a lighter biscuit.

After the milk has been added, dough should be moist. If it is too dry, your biscuits will not be light.

Variation – Cheese Biscuits: 

Add shredded cheese and/or minced onion to taste to the dry ingredients.
