Not-Buttermilk Pancakes with Blueberries
 
 
No buttermilk in the fridge? Use this easy substitution to get hearty pancakes perfect for Sunday brunch.

Ingredients
  • 2¼ C fresh ground flour
  • 1 t baking soda
  • 2 t baking powder
  • 1 t salt
  • 2 t sugar
  • 2 eggs
  • 1 cup milk, 1 cup yogurt blended together OR 2 cups buttermilk
  • ¼ cup melted butter
Instructions
  1. Mix dry ingredients in a large mixing bowl.
  2. In a separate bowl beat eggs until light.
  3. Add milk and butter.
  4. Combine wet ingredients with dry, stirring until smooth.
  5. Cook pancakes on a hot, greased griddle, turning once after bubbles appear on top of the batter.
