Oatmeal Shortbread Skillet Cookie

Ingredients
  • 1 cup plus 2 Tbsps. unsalted butter, softened
  • ½ cup dark brown sugar
  • ½ tsp. salt
  • 1 tsp. vanilla
  • 1½ cups hard white wheat flour (preferably freshly milled
  • 1 cup oat flour (freshly milled oat groats)
  • 3 Tbsps. rolled oats
Instructions
  1. Preheat oven to 350 degrees.
  2. Let skillet sit in the hot oven until dough is made.
  3. Cream together butter and brown sugar, until well combined and fluffy.
  4. Add salt and vanilla, and mix until well combined.
  5. Add flours, ½ cup at a time, mixing after each addition.
  6. Take skillet out of the oven.
  7. Butter with remaining 2 Tbsps. butter.
  8. Press dough into the pan. Be careful, the pan is hot.
  9. Sprinkle rolled oats on top.
  10. Bake for approximately 20 minutes or until cookie is beginning to brown around the edges and is almost set in the middle.
  11. Allow to cool before serving.
