Peanut Butter Swirl Black Bean Brownie Recipe

Ingredients
  • for the Brownies
  • ½ Cup Unsweetened Cocoa Powder
  • ⅔ Cup Black Bean Flour
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • 1 tsp Stevia
  • ¼ Cup Softened Butter
  • 1 tsp Vanilla Extract
  • 3 Eggs
  • ½ + ⅓ Cup Yogurt
  • ½ Cup Dark Chocolate Chips
  • for the Peanut Butter Swirl
  • ½ cup natural peanut butter
  • 2 tablespoons butter, melted
  • ¼ tsp. Stevia
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 350°
  2. Mix the dry ingredients: cocoa, bean flour, baking powder, salt, and stevia. Set aside.
  3. Mix the butter, stevia, vanilla, eggs, and yogurt.
  4. Add the dry ingredients to the wet and mix until combined.
  5. Fold the chocolate chips into the batter.
  6. Pour batter into a greased 8x8 glass baking dish. Spread evenly.
  7. Mix peanut butter, melted butter, stevia, and vanilla. Drop spoonfuls on top of the brownies then swirl with a butter knife or the back of a wooden spoon.
  8. Bake at 350° for 30 minutes.
  9. Let brownies cool for at least 30 minutes before cutting.
