In the mixing bowl of your stand mixer, combine the butter, sucanat and brown sugar and mix until blended, about 1-2 minutes. Add whole egg, and mix until incorporated. Add the extra yolk and mix on low until combined.
With the mixer on low, add the dry ingredients in thirds until just combined. Do not over beat. Over-working the dough will result in a tough cookie.
Fold in the chocolate/chips and nuts.
Scoop and bake at 325F for 10 minutes. Remove from the oven and allow to rest for 10 more minutes on the cookie sheet. Using a spatula transfer cookies to a plate and enjoy.
