Slow Cooker Banana Blueberry Bread Recipe
 
 
A tasty banana bread recipe using freshly milled flour!

Ingredients
  • 1¾ Cups of Milled White Wheat Flour
  • 2 Tsp Baking Powder
  • ½ Tsp Sea Salt
  • ¼ Tsp Baking Soda
  • ½ Cup Butter (room temperature)
  • ⅔ Cup Sugar
  • 2 Eggs
  • 3½ Tsp Honey
  • 3 Bananas (preferably over-ripe)
  • ½ Cup Fresh Blueberries
  • 4½ - 5 Quart Slow Cooker (do not try it in a larger Slow Cooker)
Instructions
  1. Grease & flour slow cooker bowl.
  2. Grind your flour in the Wondermill Grain Mill.
  3. In a large bowl, mix together the flour, baking powder, baking soda, and salt . Set aside.
  4. Using a stand mixer, mix the butter, eggs, sugar, and honey.
  5. Now, start slowly adding the banana to the mixture. For even mixing, you can pre-mash the banana or break it up into the mixture. Just make sure you are mixing on medium so that the banana is evenly distributed throughout the batter.
  6. Slowly add the dry ingredients to the banana mixture. To avoid a mess, add in small batches.
  7. Pour mixture into your greased slow cooker.
  8. Start adding the fresh blueberries to the mixture and mix carefully with a spoon.
  9. Cover and bake for 1 hr 30 minutes on high heat.
  10. Let bread cool thoroughly before you attempt to remove it from the slow cooker.
