Easy Cheddar Biscuits

Serves: Makes 1 dozen
Ingredients
  • 2 cups flour (I prefer freshly milled spelt or hard white wheat)
  • 1 tbsp baking powder
  • 1 tsp Real Salt
  • ¼ cup coconut oil
  • 1 cup milk or thinned yogurt
  • 1-1.5 cups grated sharp cheddar (or other cheese of your choice)
  • 1 tsp garlic powder
  • 1 Tbsp parsley
Instructions
  1. Mix milk or yogurt with coconut oil.
  2. Combine with flour, mixing just until flour is wet. Cover and leave overnight or for 8-12 hours.
  3. Preheat oven to 425.
  4. Add baking powder, salt, spices, and cheese, mixing just until combined well.
  5. Use a cookie scoop or spoon to drop rounded mounds of biscuit dough on a greased cookie sheet or baking stone.
  6. Bake at 425 for 10 minutes.
  7. If you don't have time to let the flour soak, you can use these alternate instructions: Mix together all dry ingredients, make a “well” in the middle. Combine oil and milk, pour into well and mix, just until blended. Add cheese and mix. Follow directions above to complete.
