Simple Homemade Crackers

Serves: makes about 100 crackers
Ingredients
  • 1.5 cups freshly ground soft white wheat flour
  • 1.5 cups sweet rice flour
  • (or use total of 3 cups whatever flour you'd like!)
  • 2 tsp sea salt
  • 3 TBsp heavy cream
  • ¼ cup olive oil
  • ¾ cup warm water
Instructions
  1. In a food processor or mixer (with dough handle) mix up the flour and salt.
  2. Add in cream, olive oil and water and mix until a ball starts to form.
  3. Dump dough out onto a lightly oiled surface, separate into 4 balls and allow to rest for about 15 minutes.
  4. Preheat oven to 425 F
  5. Transfer one ball of dough to parchment paper (enough paper to fit your baking sheet) and roll out dough until really thin, about ¼ or less of an inch.
  6. With a pastry brush dipped in water, brush top of dough. Sprinkle with desired amount of sea salt, black pepper, poppy seeds, sesame seeds, etc.
  7. Place parchment paper with rolled out dough onto a baking sheet.
  8. Using a pastry cutter or knife, score dough into 1 inch squares.
  9. Bake at 425 F for about 8-11 minutes or until lightly brown.
  10. Remove from the oven and allow crackers to cool on a cooling rack (they will continue to crisp up some).
  11. Continue with remaining balls of dough.
