Creamy Quinoa Pudding

Ingredients
  • 1 Cup Plain Coconut Milk
  • ¼ Cup Fresh Milled Quinoa Flour {use pre washed quinoa}
  • ⅛ tsp Salt
  • 1 Tb Honey {or more to taste}
  • 1 tsp Vanilla Paste or Extract {optional}
  • Pomegranate Seeds {or preferred fresh fruit}
Instructions
  1. In a small pot over medium/low heat:
  2. Whisk together the coconut milk and quinoa flour until fully incorporated.
  3. Continue to heat while stirring frequently until mixture begins to thicken and bubble. {about 10-12 minutes}
  4. Remove from heat and whisk in the salt, honey and vanilla.
  5. Serve warm or cold. {I preferred cold}
  6. Top with a splash of coconut milk, drizzle of honey and your choice of fresh fruit or nuts.
