Creamy Quinoa Pudding

Serves: 2
- 1 Cup Plain Coconut Milk
- ¼ Cup Fresh Milled Quinoa Flour {use pre washed quinoa}
- ⅛ tsp Salt
- 1 Tb Honey {or more to taste}
- 1 tsp Vanilla Paste or Extract {optional}
- Pomegranate Seeds {or preferred fresh fruit}
- In a small pot over medium/low heat:
- Whisk together the coconut milk and quinoa flour until fully incorporated.
- Continue to heat while stirring frequently until mixture begins to thicken and bubble. {about 10-12 minutes}
- Remove from heat and whisk in the salt, honey and vanilla.
- Serve warm or cold. {I preferred cold}
- Top with a splash of coconut milk, drizzle of honey and your choice of fresh fruit or nuts.
