Whole-Wheat Honey Oatmeal Raisin Cookies

“Who says you can’t have cookies for breakfast?”  These were the words that ran through my mind as I read the recipe for these cookies.  Honey, oats, coconut oil, coconut flakes, raisins, cinnamon – this is like a bowl of baked oatmeal with some flour and a few other ingredients added!  The honey in these cookies do the job of satisfying my sweet tooth without the guilt of unhealthy sugars!

Needless to say, I was anxious to try these cookies when I saw the recipe.  Would they really be good using only whole wheat flour?  Many cookies I’ve tried that contain only whole wheat flour don’t always taste the best.  Or maybe the cookie batter tastes great, but the actual cookie did not result in something I would ever dare to make for anyone.  I was in for a pleasant surprise!  The batter was delicious….and so were the cookies!

Recipe:

2 cups freshly milled whole wheat flour
2 cups oatmeal
1 cup coconut flakes
1 cup raisins
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
1 cup coconut oil {or butter}
1 cup raw honey
2 eggs

Mix the dry ingredients together.  Stir in the wet ingredients and mix well.  Drop by heaping spoonfuls onto a greased cookie sheet.  Bake at 375° for 7-9 minutes.  Yields about 4 dozen cookies. {We like our cookies a little doughy, so I take them out before they are completely done :)}.

You may wonder if I’ve ever actually made these cookies for breakfast.  Yes, I really have!  My girls have woken up to freshly made Oatmeal Raisin Cookies and a glass of raw milk. 🙂
