Vegan Gingerbread Cake

The holidays are coming and that makes me think of pumpkin, cranberries and gingerbread.

Particularly gingerbread.  I LOVE a good piece of gingerbread cake.  Since I have changed my diet, I had not attempted yet to make many cakes.  But I knew this was my chance using my new Wondermill Electric Grain Mill.

I decided to use whole wheat flour made from red wheat berries. It has such a rich taste which I felt would blend nicely with the flavors of molasses and ginger.

The result was fantastic.  You won’t believe you are eating a way healthier vegan version of a classic! (This recipe was adapted from a Kroger Stores Flyer)


Vegan Gingerbread Cake

A healthied up version of a holiday classic
Ingredients
  • 3 Cups Freshly Milled Whole Wheat Flour
  • 2 tsp Baking Soda
  • 3 tsp Cinnamon
  • 1 tsp Ginger
  • ½ Cup Sugar Substitute
  • ½ Cup Vegan Butter
  • 3 tsp NRG Egg Replacer plus 4 TBSP Water (mix and let sit 2 minutes)
  • ¾ Cup LIght Vanilla Soy Milk plus 1 TBSP Vinegar (mix and let sit 5 minutes)
Instructions
  1. Mix dry ingredients into a bowl
  2. In a separate bowl, combine wet ingredients
  3. Slowly fold wet ingredients into dry ingredients
  4. Pour into a greased 9x13 baking pan
  5. Bake at 350 degrees for 25 minutes

Grain Mill Wagon Challenge Experience: I'd like to thank Wondermill for the opportunity to participate in the Grain Mill Wagon Challenge. I had never thought of milling my own flour before this. I was very eager to try it and I am so glad I did. Not only do I get fresh flour milled instantly and easily to the consistency I need, it saves me money as well.
