Spelt Coffee Cake

We’re often on the lookout for a quick and easy breakfast bread and this one was super easy to put together and gone within 15 minutes! Next time, I’ll make more.

Using our fantastic Wondermill grain mill has become a family event; even my husband marvels at how easy it is to make freshly milled flour. Every time I mill flour, each child runs to the kitchen to learn what I’m making next!

Being late on a cold evening, my children requested something warm and comforting to prepare for breakfast the next morning, so we decided to make a simple coffee cake, using freshly milled spelt berries.

Ingredients for coffee cake:

  • 1 1/2 cups sifted spelt flour
  • 2 1/2 teaspoons baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 1/3 cup of Truvia Baking Mix or 1/4 cup of honey
  • 1/3 cup butter, melted
  • 1/2 cup milk
  • 1 tsp. vanilla

Ingredients for topping:

  • 1/4 cup of Truvia Baking Mix
  • 1/4 cup sifted spelt flour
  • 1/4 cup butter, softened
  • 1 tsp. cinnamon

After mixing the batter, pour into an 8 or 9 inch cake pan. Sprinkle topping over the batter and bake for about 30 minutes at 375 degrees.

As it turned out, the children didn’t wait until breakfast to enjoy it! Not only was this recipe simple and easy to put together, it would be advantageous to bake more than one at a time, as this cake would be excellent to freeze for future use, especially when unexpected guests stop by. It would even be a great afternoon snack for a busy mom or for those who are returning home from school and need a satisfying pick-me-up.
