Peanut Butter Swirl Black Bean Brownie Recipe

This recipe is based on the Black Bean Brownies recipe by fellow Grain Mill Wagon contributor, Nicole of WonkyWonderful.com.

I recently found out I have a severe gluten intolerance, so I was even more thankful to have the Wonder Mill to make my own gluten free flours without forking out the dough to buy the pre-made gluten free products or mixes at the store.

Since I also try to follow a fairly healthy low-carb diet, black beans are a great slow burning carb. This recipe uses pure Stevia for sweetener instead of sugar. If you are looking for a treat without any added sugar, you might like this Dark Chocolate Peanut Butter Swirl Black Bean Brownie Recipe.

I started by, of course, grinding the black beans in my WonderMill. The consistency turns out way better with black bean brownies made with freshly milled flour rather than just mixed or pureed black beans! You’d never guess that the fluffy flour pictured below could have come from healthy black beans, and the finished brownies definitely don’t taste like it either.

These are really simple to make. Just mix all your dry ingredients into a small bowl, and your wet ingredients in a large bowl. Then add the dry to the wet and mix some more.

You can use a hand mixer or stand mixer. Then separately, mix the ingredients for the peanut butter mixture.

Peanut Butter Swirl Black Bean Brownie Recipe

Ingredients
  • for the Brownies
  • ½ Cup Unsweetened Cocoa Powder
  • ⅔ Cup Black Bean Flour
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • 1 tsp Stevia
  • ¼ Cup Softened Butter
  • 1 tsp Vanilla Extract
  • 3 Eggs
  • ½ + ⅓ Cup Yogurt
  • ½ Cup Dark Chocolate Chips
  • for the Peanut Butter Swirl
  • ½ cup natural peanut butter
  • 2 tablespoons butter, melted
  • ¼ tsp. Stevia
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 350°
  2. Mix the dry ingredients: cocoa, bean flour, baking powder, salt, and stevia. Set aside.
  3. Mix the butter, stevia, vanilla, eggs, and yogurt.
  4. Add the dry ingredients to the wet and mix until combined.
  5. Fold the chocolate chips into the batter.
  6. Pour batter into a greased 8x8 glass baking dish. Spread evenly.
  7. Mix peanut butter, melted butter, stevia, and vanilla. Drop spoonfuls on top of the brownies then swirl with a butter knife or the back of a wooden spoon.
  8. Bake at 350° for 30 minutes.
  9. Let brownies cool for at least 30 minutes before cutting.
