Mix & Match Scone Packets for the Freezer ~ Breakfast Simplified

I am a champion for simplified breakfasts but since we don’t eat many commercial cereals, I have to find other ways to get a quick breakfast ready for my family. One way to get quicker breakfasts is to prepare packets for the freezer. Having all of the dried ingredients pre-mixed saves me more time than I ever realized. Not having to get out all of the ingredients, the bowls and measuring cups, AND then measuring and mixing everything not only saves me a lot of time, but it saves me on clean-up too! I loving having mix packets in my freezer.

One of my family’s favorite breakfast is scones and this is my recipe for delicious Mix & Match Scones on the double!


I recently starting using Soft White Wheat. One of the things my family missed when I first start grinding my own flour was soft, delicate baked goods that only come with white flour. Well, I finally figured out that I can get that flour {or very close to it, anyway} with soft white wheat. Soft white wheat, also called pastry wheat,  is lower in protein and higher in carbohydrates than hard wheat and produces a very fine, delicate freshly ground flour.

Mix & Match Scones
Preheat the oven to 375 Degrees

1. Sift together:

  • 2 1/2 cups freshly ground soft white wheat flour {grind on medium}
  • ½ tsp. baking soda
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ¼ cup sugar {I simply use 1/2 cup raw sugar instead of white and brown sugar}
  • ¼ cup packed brown sugar

2. Cut in ½ cup cold butter

3. Stir in 1 cup of your choice of mix-ins (apple, pear, chocolate chips, blueberries etc).

4. Stir in 2/3 cup buttermilk. Dough will be dry.

5.  Transfer dough to un-greased cookie sheet. Shape it into a 9-inch round. Cut into 8 wedges with a floured knife. Sprinkle the top with sugar.

6. Separate the wedges, allowing ½ in between each wedge for better browning.

7. Bake 22-28 minutes.

To make packets for quicker baking in the morning, get out all of your bowls and mix the dried ingredients assembly line style.

Put dry ingredients in small freezer bags. I re-use my bags.

On baking day, remove packet from freezer, and follow steps 2-7.
