Malpuwa – Nepali Sweet Fry Bread

We have some very good friends from Nepal. Do you know one of the best things is about having foreign friends? The yummy food!

We have had some great things from our friends. This is the latest thing I have finally figured out how to make. They usually have these with breakfast, but they are a great light treat for dessert.

First, grind your flour using the fantastically fast and quite Wonder Mill. I used hard white wheat berries for this. I think it’s be even better with hard red.

Start heating oil in a shallow pan, I used coconut oil – virgin or expeller pressed is fine. You’ll need a little more than 1/4″ deep. Then thoroughly mix the following:

3 cups freshly ground flour
3 cups cold water
1 cup organic cane sugar
1/2 teaspoon cinnamon

Test the oil, if it isn’t bubbly enough they will cook slowly and become saturated with oil. You also don’t want them to brown too fast! Pour about 1/8 cup batter as close to the oil as possible.

It will bubble and start to loosen from the bottom of the pan as it cooks, oil should cover the top to cook and start to puff.

I just used a fork to help work loose and remove. Let dry on a paper towel and eat as soon as they are cool enough. Enjoy!
