Homemade 5 Grain Bread ~ 5 loaves in under 90 minutes

I’ve been baking 90% of the bread we eat since 2004 and rarely are any two batches of my bread 100% alike. I start with the same basic recipe but then add and subtract ingredients based on what I have in my pantry and what sounds good at any given moment. This week, I whipped up 5 loaves of 5 Grain Bread in my Bosch in under 90 minutes ~ from start to finish, clean up included.

The result was heavenly! A nice crunchy bread that’s great toasted and then spread with butter and sharp, white cheddar cheese, slathered with nutella, or enjoyed with butter and homemade jelly.

Here’s how you can make your own!


First, gather ingredients. I used hard red wheat, whole oats, raw sunflower seeds, freshly ground flax seeds, and chia seeds for this 5 grain batch.


Grind your flour. I also grind fresh flax to add to my bread. Make sure you DO NOT grind the flax in your Wondermill – you’ll ruin your mill!! I have a special little coffee grinder reserved for my flax seeds.


My secret workhorse is my Bosch mixer. It allows me to mix and knead 5 loaves of bread in under 10 minutes. I add my wet ingredients first, then my dry ingredients. On speed one, I mix everything together and add enough extra flour (1-2 cups) so the dough pulls completely away from the sides of the mixer. Knead in the mixer for 5 minutes.


Form 5 dough balls and put them in prepared pans to rise.


I place my pans on top of  my pre-heated oven, cover with towels, and let them rise until doubled, usually about 30 minutes.


Finally, let the baked loaves cool on racks until cool until to handle, then remove the bread and let it cool completely.

Slice and enjoy!!

If you’d like to make this scrumptious bread too, here’s the recipe.

Preheat oven to 375 degrees and prepare 5 bread pans.

Place in your mixer:

  • 5 cups warm water
  • 1/2 cup oil {I’ve been using Organic Palm Shortening}
  • 3/4 cup honey {I use raw honey}
  • 1 heaping TBSP dough enhancer
  • 1 heaping TBSP good quality salt
  • 10 cups ground flour {I use hard red wheat}
  • 3 TBSP Saf instant yeast
  • 1-2 cups additional flour

Turn on Bosch, knead on speed 1. Quickly add as much additional flour to make the dough pull away from the side of the bowl. Add back 2-4 TBSP water {if needed} to keep the dough soft. Knead for 5 minutes. Oil your hands and counter. Divide dough into 5 balls and let it rise in prepared bread pans until doubled {~ 30 minutes}. Turn oven down to 350 degrees and bake for 30-35 minutes.
