Healthy Oatmeal Raisin Cookies

My neighbor, whom our kids think is their grandpa, is THE best. He is constantly looking out for us- cleaning out our gutters, fixing flat tires, bringing vegetables from his garden. We adore him. His favorite kind of cookies are oatmeal raisin. I came up with this uber-healthy version for him, to say thanks for the many nice things he has done for us. (It’s also dairy-free for my son, although you don’t have to make yours dairy-free). Although they tasted “healthy,” they were still delicious!
Healthy Oatmeal Raisin Cookies:
*Cream together:
1/2 cup butter (or dairy free substitute)
1/2 cup applesauce
2 eggs
2 tsp. vanilla
1/2 cup sugar
1/2 cup honey
*Sift and add:
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
*Gently mix in:
2 cups oats
1 cups whole wheat flour
1/4 cup barley flour
1/4 cup flax seed flour
1/4 cup wheat germ
1 cup raisins
 1/2 cup nuts
*Bake for 10-12 minutes at 350 on a greased baking sheet.
Here is a picture of all the fun ingredients I used. I ground the whole wheat and barley in my Wondermill, with my daughter’s help 🙂

About Rach @ Family Ever After

Hi! I am Rachel Howard, and I have a blog called Family Ever After, where I talk about things I cook, sew, craft, garden, activities with my kids, and more. My husband and I both grew up in South Dakota. I majored in Family and Consumer Science Education at Brigham Young University, and then taught middle school sewing and foods for one year, before making the leap into motherhood. We now have 3 kids, and I love to cook for them. They help me in the kitchen daily, and I am very passionate about cooking healthy and tasty food, with whole ingredients. I love The Wondermill Company!

Grain Mill Wagon Challenge Experience:
One of the main reasons I write a blog is because it gives me incredible opportunities to work with companies like The Wonder Mill Company. I literally have had "wheat grinder" written on my Christmas and Birthday list for the last 3 years, so you can imagine my excitement when I was given a mill to try out and review. The day it came in the mail really did feel like Christmas! I knew that I would like it, but actually, I love it! It will grind so much more than just wheat, which I had no idea was possible! My kids all love helping to pour the wheat berries slowly into the grinder. We had fun talks about what was taking place, and why we grind our own wheat. Freshly ground wheat is healthy, and the ability to store and use your own wheat is amazing. I loved coming up with recipes for this challenge, and although I could think of a million cookie recipes with whole wheat, I was actually able to come up with healthy breakfast and dinner ideas too! I am so grateful to have had this experience!
