Whole Wheat Tortillas
 
 
This recipe makes about 24 tortillas.

Ingredients
  • 6 cups (750 g) whole wheat flour (preferably freshly ground) (I like to use kamut or spelt)
  • 2 cups cold filtered water
  • 1½ teaspoons non-aluminum baking powder
  • 1½ teaspoons sea salt
  • ½ cup extra virgin olive oil or melted virgin, unrefined coconut oil
  • Do not use oil for frying, makes them crispy.
Instructions
  1. Combine the ingredients in a bowl.
  2. Let the dough rest for at least an hour.
  3. Divide the dough into 24 pieces (or more if you want smaller tortillas, less if you want bigger ones)
  4. Roll out each small dough piece into a thin circle.
  5. Fry the tortillas in a frying pan. Do not use oil when frying them, the oil in the dough is enough to keep the tortillas from sticking and not using more oil in the pan makes them deliciously crispy.
