Whole Wheat Chocolate Chip Cookies

Serves: 2 dozen
- 1 cup unsalted, organic butter
- 1 cup organic brown sugar
- ¼ cup granulated sugar
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 2¼ cups whole wheat pastry flour
- ½ teaspoon sea salt
- 1 teaspoon baking soda
- 1¾ cups semi-sweet chocolate chips
- Preheat oven to 375 degrees.
- Line 3 baking sheets with parchment paper and set aside.
- In a large bowl, beat butter until creamy.
- Add the brown sugar, granulated sugar, and egg, beat until light and fluffy
- Add the vanilla extract, flour, salt, and baking soda. Beat just until well combined.
- Stir in the chocolate chips.
- Using a cookie scoop {mine is #30} place dough on prepared baking sheet, about 2 inches apart.
- Bake for 9 to 11 minutes, until golden brown.
- Remove from oven and allow to rest on baking sheet for 5 minutes.
- Move cookies to a wire cooling rack and cool.
- Store in a sealed container for up to 3 days.
