Chocolate Banana Cupcakes- Gluten free, Dairy free, Egg Free, No Sugar Added

You Tube: Grinding Brown Rice Flour

Chocolate Banana Cupcakes

1 cup mashed banana

1/2 cup room temperature water

1/4 coconut milk mixed with 1 tsp vinegar (let stand 5 minutes)

1/4 cup coconut oil

1 tsp vanilla

1 cup brown rice flour (freshly milled)

1/4 cup cocoa powder

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/3 cup dairy free chocolate chips, or grate dairy free chocolate into it

Mix all. Bake at 350 in greased or lined muffin tin for 20-25 minutes.

Frost if desired.
