Whole Grain Blueberry Oat Flour Mini Muffins

My kids LOVE muffins, especially blueberry muffins. I had some fresh blueberries last week and just had to make them with whole wheat and oat flour. They were really good, and the only problem is, I made over 2 dozen of them and they were gone as fast as they came out of the oven! Wheat and Oat Flour ground in a Wondermill

I started out by grinding Oat Flour and Wheat flour in my amazing Wondermill. (This recipe also calls for Ground Flax…..DO NOT GRIND THE FLAX IN THE MILL)

Mix Together

  • 1 cup Oat Flour
  • 1 cup Wheat Flour
  • 1/2 tsp Cinnamon
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 T Ground Flax seed

Then in another bowl mix together wet ingredients.

  • 1/2 C milk
  • 1/4 C Unsweetened Applesauce
  • 1/4 C Agave (I added a little bit more)
  • 1 tsp Vanilla
  • 3 T water

Mix in Dry Ingredients and then add 1/2 to 1 cup of Blueberries ( depending on how blueberry”ish” you want it).

Whole Grain Oat flour and Wheat Flour Mini Blueberry Muffins

Bake in Mini Muffins tins at 400 degrees for 20 minutes. You can do regular muffin tins, just add a litle more time.

Grain Mill Wagon Challenge Experience:
We had a great time participateing in the Grain Mill Wagon Challenge. It was fun to challenge ourselves and grind all the different kinds of grains we could grind in the mill. We did rice, popcorn, oats and are excited to try more. We love this mill especially the capacity that it can grind and also how quiet it is compared to other mills.
