30 Minute Whole Wheat Dinner Rolls

30 Min Dinner RollsI love me some good, yeasty dinner rolls hot from the oven! I can smell them now…. Mmmmm so fresh and slightly sweet! Of course, I always think “You know, some dinner rolls would be really good with this meal.” WAY too late to make my absolute favorite recipe. Those bad boys require 10 minutes of kneading, 30 minute rise, punch down, 1 hour rise, and a 25 minute bake! 🙁 And then there’s the “cheater” rolls. Those frozen Rhodes dinner rolls. Still scrumptious. And all you do is throw them into a pan frozen and let them rise before baking, which cuts out a few steps, but that still takes at least 90 minutes with the quick rise! Ain’t Nobody Got Time for That! (But seriously, who remembers to thaw those things out ahead of time on a regular basis? I mean, they’re reserved for holidays when the FOOD is the only thing on your mind, right?)

Well, I’m here to tell you that Wondermill and Kitchen Meets Girl have saved the day! Using your handy dandy wondermill and some freshly ground flour, you can use Ashley’s fantastic recipe for quick and easy dinner rolls to serve up some healthy, yummy treats with dinner tonight.

The Recipe

30 Minute Whole Wheat Dinner Rolls
 
Cuisine: Bread
Serves: 1 Dozen
 
Ingredients
  • 1 Cup plus 2 Tbsp warm water
  • ⅓ Cup Oil
  • 2 Tablespoons Active Dry Yeast
  • ¼ Cup Sugar
  • ½ teaspoon Salt
  • 3½ Cups freshly ground Soft White Wheatberries
Instructions
  1. Preheat oven to 400 degrees.
  2. In the bowl of your stand mixer, combine the warm water, oil, yeast, and sugar. Allow the mixture to rest for 10-15 minutes.
  3. Mix 2 cups of the flour, the salt, and the egg into the yeast mixture using a dough hook. Add the remaining 1½ cups flour ½ cup at a time.
  4. Shape dough into 12 balls and place each in a lightly greased muffin tin. Let dough rest for 10 minutes.
  5. Bake for 10 minutes or until tops are just golden brown.

Start with your handy dandy Wondermill, and grind up some soft white wheatberries. I used the pastry setting to get my flour extra fine. WondermillNext, mix your water, oil, yeast and sugar thoroughly, and let sit for 10-15 minutes.

IMG_5681It will look like normal, proofed yeastwater at first, but after the 10-15 minutes it should look more thick and fluffy. (Sorry, some of my photo files somehow got “corrupted” when uploading to the computer so you’re straight out of luck for a picture. I hope I’m able to explain everything well enough!)

Next, add about half of the flour, plus the salt and egg, and mix well. Slowly add the rest of the flour until it is well combined.

Roll the dough into 12 equal balls, and place in a lightly greased muffin tin. (Or in a 9×12 pan…your choice!) Let the dough rest for an additional 10 minutes.

Bake for 10 minutes or until the tops are golden brown, then serve that yummy golden deliciousness up with dinner!
